Potted chicken and foie gras parfait with sourdough toast and wild forest berries

Roasted Jerusalem artichoke and steamed chestnut soup

A trio of salmon: Irish smoked salmon on brioche with caper berries, Scottish hot-smoked salmon with lemon dressing and pea shoot salad, and Loch Duart poached salmon with chervil mayonnaise

 
Lincolnshire beef braised in vintage port with fondant potatoes, glazed carrots, button onions and wild mushrooms

Roast partridge with creamed sprouts, smoked bacon, sage and truffle-infused crushed potatoes and confit shallots

Yorkshire mead marinated roast venison with potato and parsnip pan haggerty and urban honey-glazed plums

Garlic and wild herb buttered black tiger prawns in a Brixham crab bisque with rustic potatoes, courgette, carrot and leek ribbons
